  3. In a separate bowl add the breadcrumbs, crumbled feta cheese, 2 tbsp Parmesan cheese, 1 handful of breadcrumbs, oregano, nutmeg, lemon zest and salt/pepper. Mix everything and add 1 tbsp olive oil. Then add the spinach mixture. Mix everything thoroughly.
  4. Then add the beaten eggs and combine everything evenly before transferring the mixture to a lightly oiled backing dish and sprinkling the remaining Parmesan on top.
  5. Add 1-2 tbsp olive oil to the remaining breadcrumbs and combine until they look like the picture. Then sprinkle over the spinach mixture.
  6. Bake in the oven for 30 minutes until the topping is golden brown. Serve with a salad.
